Pumpkin Spice Muffins

These Pumpkin Spice Muffins are a great way to start your day! They are a great source of fiber, manganese, and vitamin A! If you make them in advance, they are an excellent way to ensure you are eating healthy, even if you are in a hurry!
Prep Time: 15 min Cook Time: 35 min Yield 12
Ingredients
- nonstick cooking spray
- ½ cup walnuts
- 2 cups garbanzo bean flour
- 1 tbl pumpkin pie spice
- 1 tbsp flax meal
- ½ cup raisins
- 10 large pitted dates
- ½ cup canned pumpkin puree
- ½ tsp vanilla extract
- 1 cup unsweetened almond milk
- ½ cup unsweetened applesauce
Directions
- Preheat oven to 350° and lightly coat a muffin tin with nonstick cooking spray.
- Chop walnuts and combine with flour, pumpkin spice, flax meal, and raisins. Stir to blend.
- Combine dates, pumpkin puree, vanilla, unsweetened almond milk, and applesauce in a blender. Blend for 1 minute.
- Combine the wet and dry ingredients and stir to blend. Pour the mixture into the muffin tin.
- Bake for 30 to 35 minutes or until the tops of the muffins are golden.
- Cool for at least 10 minutes before removing muffins from the pan.
